Zucchini Relish

10 cups zucchini — ground
4 cups onion — ground
5 tablespoons salt
2 1/4 cups vinegar
6 cups sugar
1 tablespoon nutmeg
1 tablespoon dry mustard
1 tablespoon turmeric
1 tablespoon cornstarch
2 tablespoons celery seed
1/2 teaspoon pepper
1 whole red bell pepper — chopped fine
1 whole green bell pepper — chopped fine

Combine zucchini, onion and salt, let stand overnight, then drain and rinse in cold water. Add remaining ingredients, mix well and bring to a boil. Simmer 30 minutes, then ladle into hot pint jars and seal. Makes about 7 pints.
