2 cups dark brown sugar
1 (16 oz) can pumpkin
1 cup vegetable oil
2 tsp vanilla
4 cups flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp ginger
2 cups raisins
1 cup nuts, chopped

Preheat oven to 350 degrees F. Grease a cookie sheet. In a large bowl, beat sugar, pumpkin, oil and vanilla until blended. Combine flour, baking powder, soda, salt and spices; stir into sugar mixture. Stir in raisins and nuts. Drop by rounded teaspoons 2 inches apart onto cookie sheets. Bake 12-15 minutes until set. Remove to a rack to cool. Yields 7 dozen.

1 c. canned pumpkin
1/2 c. cold milk
1 pkg. french vanilla pudding mix
1 tsp. pumpkin pie spice
3 1/2 c. whip cream
1 graham cracker crust

Combine pumpkin, milk, pudding mix, spice in a small mixing bowl. Beat at low speed w/ electric mixer until well blended.(about 1 min.) Fold in whip cream. Spoon into crust. Freeze until firm. (about 4 hours) Enjoy..
