Summer Pasta Primavera

1 pound ziti pasta
1 T. olive oil
1 red onion, chopped
2 cups chopped zucchini
1 clove garlic, minced
2 cups chopped fresh tomato
1 cup fresh or frozen corn, thawed
1/4 t. hot red pepper flakes (optional)
1 cup milk
1/2 cup freshly grated Romano cheese
salt and pepper to taste

Prepare pasta according to package directions; drain and set aside. In a skillet, heat the oil over medium heat. Add the red onion and zucchini and cook until the onion is golden. Reduce heat to medium and add the garlic, tomato, corn, red pepper flakes, milk and cheese. Stir until the cheese is melted and the vegetables are hot. Add the pasta and mix thoroughly. Season with salt and pepper to taste.

Serves 6.
