Spinach Artichoke Dip

This tasty spinach artichoke dip recipe is easy to make and delicious, great for a quick homemade appetizer to bring to a party or just for fun at home.

1 package frozen spinach (thawed)
1 jar marinated artichokes, chopped
8 oz. philly cream cheese
8 oz. sour cream
3/4 cup shredded parmesan cheese
8 oz. shredded monterey jack cheese
1/2 onion, finely chopped
1 stick butter
Red pepper flakes to taste (if you like a bit of spice)
OPTIONAL: water chestnuts, chopped if you like them (adds a nice texture).

Saute onions in butter, adding ingredients while mixing and blending well after each addition. Add the ingredients in this order for best results: Spinach, Cream cheese, Sour cream, Parmesan cheese, Artichoke hearts, Crushed Red Pepper Flakes, and if desired, the chopped water chestnuts.

Remove from heat and put in a crock pot or microwave safe dish. Top with Monterey Jack cheese and melt.
