The summer produce is rolling in, and it’s prime time for salsa! We are getting so many yummy ideas that we’re going to introduce a new recipe every Saturday during prime salsa season. With a lot of sweetness and a bit of spice (the cubanelle pepper is mild), this strawberry salsa recipe adds pizzazz to your dinner table and parties.
Ingredients:
1.5 pounds ripe strawberries, hulled
1 large cubanelle pepper, seeded and deveined
2 tsp. lemon juice
1 tsp. granulated sugar
Chop the strawberries and pepper in a food processor or by hand. Mix in the lemon juice and sugar. Refrigerate this until needed, and it will keep for several days. Makes about 2 and a half cups. Serve with pork or turkey at dinner, or serve it as a snack with pita chips.
