Salsa Saturday: Rainbow Salsa

My friend Jenn once served me a similar salsa, and this rainbow salsa recipe is inspired by hers.  It is full of vegetable goodness and lots of bright colors.  


3 medium very ripe tomatoes

1 orange sweet pepper

1 yellow sweet pepper

2 Hungarian peppers, also known as banana peppers

3 tomatillos

1 red onion

2 jalapeños

2 cloves garlic, minced

1.5 cups loosely packed cilantro leaves

4 tablespoons lemon juice

2 tablespoons lime juice

1 teaspoon sea salt

1 teaspoon Tabasco sauce

By hand or in a food processor, coarsely chop the tomatoes, peppers, tomatillos, onion, jalapeños, and cilantro.  Stir in the garlic, lemon juice, Tabasco sauce, and salt.  For full flavor, refrigerate overnight to let the flavors mingle. This keeps about a week in the refrigerator.
