How to make Picnic Red Potatoes with Zesty DressingThis tasty treat is easy to make and perfect for any party occasion (or at home to enjoy as well!).

You will need 1 lb. red potatoes, (or about 8 medium sized potatoes).

Ingredients for the Dressing:

1 T. olive oil
4 green onions, chopped
1/4 cup salad oil
1 T. sherry wine vinegar
2 T. parsley, chopped
2 T. Dijon mustard
1 cup mayonnaise
1/4 t. sugar

Wash potatoes and lightly peel them, leaving the white showing. Cook in boiling water – until they are fork tender. Remove from heat and drain well. Then let them cool. Sauté the four green onions in olive oil until brown. Remove from heat. Let cool.

Mix up the remaining ingredients, then add the sautéed onions; stir to blend. Lightly toss the cooked potatoes in the mixed dressing. Chill the completed potatoes to soak in the zesty flavor and then enjoy!
