3/4 cup butter flavored shortening
1 cup peanut butter
1 1/2 cups firmly packed brown sugar
1/2 cup water
1 egg
1 tsp vanilla
3 cups oats, quick or old fashioned, uncooked
1 1/2 cups flour
1/2 tsp baking soda
granulated sugar

Beat the first three ingredients together until creamy. Beat in the water, egg, and vanilla. Add the combined dry ingredients. Mix well. Cover and chill; about two hours. Heat the oven to 350 F. Shape the cookie dough into one inch balls. Place on an ungreased cookie sheet. Flatten the cookies with tines of a fork dipped in granulated sugar to form a crisscross pattern. Bake for 9 to 11 minutes or until the cookie edges are golden brown. Cool for one minute on the cookie sheet. Remove to a wire rack to cool completely.
