Papaya Butter

3 large papayas
1/4 cup lime juice
1 teaspoon grated lime rind
1 1/2 cups sugar

Remove peel and seeds from papaya; cut into small chunks. Whirl in a blender or food processor along with lime juice until smooth. Pour puree into a large kettle and stir in lime rind and sugar until well blended. Bring to a boil; reduce heat and simmer, uncovered and stirring occasionally, until mixture thickens (about 5 minutes). Pour into 4 prepared half pint jars and seal. Makes 4 half pints.
