A special drink makes every party sparkle, and this strawberry lemonade is delicious! This homemade pink lemonade recipe makes a half gallon, and you can easily double or triple it for a larger crowd.
1 c. strawberries, hulled
3/4 c. lemon juice (I usually cheat and use the bottled, reconstituted juice)
3/4 c. granulated sugar
a few strawberries for garnishing (optional)
In a small saucepan on the stove, put the sugar and a cup of water on high heat and heat to boiling. Boil for a few minutes and set aside. Boiling the sugar and water makes the lemonade taste better. In a half-gallon pitcher, mix the lemon juice and sugar water, and then fill the pitcher almost all the way up with water. Leave an inch or so of room at the top.
In a food blender, blend the strawberries with about a cup of the lemonade until smooth and there are no chunks. Mix it all together in your pitcher. If desired, slice a few strawberries and let them float in your lemonade as a garnish. Chill and stir before serving.
1. Mash the strawberries, instead of blending them, and mix them with your lemonade in the pitcher. Let it sit in the refrigerator for several hours so that the pink color gets into the lemonade. Then your little guests can scoop out the strawberries with spoons.
