Hawaiian Pineapple Chicken

Hawaiian Pineapple Chicken Recipe:

4 chicken breasts cubed
2 tsp. garlic minced
2 T. olive oil
1 cup thinly sliced carrots
1 c. diced green pepper
8oz can pineapple, juice drained and reserved

Cook chicken breasts in olive oil till tender and browned. Add carrots, garlic and peppers and cook till tender. Add pineapple chunks and continue to cook on low heat.

3 T. cornstarch
1/4 c. apple cider vinegar
1/2 c. ketchup
14.5 oz can of chicken broth
1/4 c brown sugar
Pineapple juice

Pour over chicken mixture and cook till thickened – about 20 minutes. Serve over rice.
