Fruit and Pork Kebabs Recipe:
1/2 cup apricot jam
2 tablespoons cider vinegar
1 tablespoon tomato paste
1 tablespoon olive oil
4 small pork leg steaks, cubed
1 small red onion, cut into wedges
1 green apple, cored, cut into cubes
1/2 red capsicum/bell pepper, seeded, cut into cubes
8 bamboo skewers, soaked
In a shallow dish combine jam, vinegar, tomato paste and oil. Add pork, turning to coat. Allow to marinate for at least half an hour.
Thread pork, onion, apple and capsicum alternately onto pre-soaked skewers.
Heat frying pan or barbecue to medium. Brush lightly with oil. Cook kebabs for 10-15 minutes, turning, until cooked to taste. Serves 4.
