Fresh Berry Jam

1 cup strawberries, or other berries
3/4 cup sugar
1 teaspoon lemon juice
Wash berries and let drain.

Microwave:  Combine berries, sugar and lemon juice in a glass bowl. Cook, uncovered, at 100% for 5 minutes.
Scrape down sides of bowl. Microwave 1 to 3 minutes longer or until mixture reaches 218 degrees on an instant read thermometer.

Stove Top: In a nonreactive pan, combine berries, sugar and lemon juice. Cook over medium-high heat, stirring constantly, until the mixture comes to a boil. This should take between 5 to 8 minutes.

Makes 1 cup.

1 tablespoon = 40 calories
