Blueberry Cobbler Cookies

March 14th, 2008

1 cup butter, softened
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
1 tsp vanilla
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1 1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
3 cups quick-cooking oats
1 cup dried blueberries
1 cup white chocolate chips

Pre-heat oven to 325 degrees. Cream together butter and both sugars. Add eggs, one at a time, and vanilla. In another bowl stir together flour, baking soda, cinnamon, nutmeg, and salt. Stir into sugar mixture. Stir in oats, then blueberries and white chocolate chips. Drop by heaping teaspoons onto parchment-lined cookie sheets. Bake for 8-12 minutes but do not over bake. Cool on wire racks. Makes about 3 1/2 dozen.
