I wanted to share a tasty black bean soup recipe that the whole family, including Lil Duck, just loves! I do drain the liquid off for the little toddler, he’s been eating the beans and such as finger food since about a year old (when he was really little, I left out the tomatoes and corn & added small bits of smushed avocado to make a nice finger-food dish for him).
Black Bean Soup
1 can black beans
1 can diced tomatoes
1 can corn
V8 juice (or tomato juice or soup or whatever you have) – enough to cover the other ingredients
Other spices as wanted
Put on stove on low heat, let simmer for an hour or so. If you want, add egg noodles and cook for another 20-30 minutes.
You could also add salsa, onions, omit the juice and put it in a tortilla…. it’s quite flexible!
